Click "File," hover your mouse over "Export" and select "Save as EPS." Browse out to where you'd like to save the EPS file and modify the filename if necessary.
You can save Octave output as an .EPS file. You can also view an existing .EPS file simply by typing a short command at the terminal command prompt on a Linux or Unix computer.
